What is the truffle?
The truffle is a type of mushroom. To be more precise they are the fruiting body of a subterranean mushroom. Some of them (mostly from genus Tubers) are edible. The truffles are ectomycorrhizal (typically formed between the roots of around 10% of plant families, mostly woody) and live in a symbiosis with their hosts.

How the truffles grow?
Known for centuries, the truffle, for some appears with the first thunders in autumn or with the first frost according to others. Third say that truffles can be found (and they are) where the truffle flies (Suillia spp.) are. A recent scientific publication also says that a truffle can appear only after a male-female game. What is for sure is that if a truffle is about to appear it would be underground, close or within the roots of some types of trees.

Are all truffles market valuable?
No. As a highly desirable item, the truffle has its own fake copies too. Here is a non-exclusive list of the most market valuable species with their Latin and common names
Tuber melanosporum Vittadini - Black Perigord truffle;
Tuber brumale Vittadini - Winter truffle;
Tuber aestivum Vittadini - Summer Black truffle;
​Tuber uncinatum Chatin - Autumn Black truffle;
Tuber magnatum (Pico) Vittadini - the Italian white truffle or the Alba white truffle;
Tuber borchii Vittadini - Tuscany white truffle or Whitish truffle
Tuber macrosporum Vittadini - Smooth Black truffle
Two of them are considered to the best. Tuber Magnatum (Pico) Vittadini with its common name the Italian white truffle or the Alba white truffle and Tuber melanosporum Vittadini, also called The Perigord Black truffle or the winter black truffle.
Are truffles easy to be found?
Definitely no! There's no guarantee that you will find truffles even if you have truffle-tree in your own garden. There's even no certainty that the truffles found in previous season will appear at the very same place and quantity or at all for this season. Other reason to maintain high price and always higher demand than supply is the continuous deforestation - loss of fields where they can grow naturally. There are also other human related factors counted as rumours, but still reflecting on the yields.
How to store a truffle?
The best way to store them is in an airtight container wrapped in absorbent paper, changed on daily basis. The purpose of the absorbent paper is to delay the process of decay in your truffles by absorbing the moist released from the truffle in the container. We suggest using rice instead, as the rice is natural moist absorber and can also be cooked when intended. The rice can also be replaced when desired, of course depending on the quantity used at first. The truffles shall be kept in your refrigerator's vegetable compartment or at the bottom of your fridge if you do not have one.
